Double chocolate brownies recipe

I have made brownies less than 5 times throughout my life and never did found the BEST, prefect recipes throughout those experiments (as claimed by the recipe publishers ahem ahem). Some were too sweet, some were not as fudge-y and some were just too dry! I got this recipe from A table for Two or More and was impressed with how gooey and not overly sweet was it! Bonus points for being an easy recipe to follow too!

Ingredients:
250g dark chocolate
100g butter
100g sugar
1 tsp vanilla essence
3 eggs
60g plain flour
100g dark chocolate, roughly chopped
100g white chocolate, roughly chopped


Method:
1. Melt 250g dark chocolate in a heatproof bowl over a pan of simmering hot water. Add in butter once most of the dark chocolate has melted. Stir to ensure even heating. Once the mixture has melted, take off the heat and gradually add sugar.
2. Ensure that the mixture is just warm before cracking in the eggs. Stir well before adding the vanilla essence.
3. Fold the mixture into the flour and add half of the roughly chopped chocolate bits into it. Pour into a baking tin and top it with the remaining bits of roughly chopped chocolate
4. Bake at 150C for 40 minutes. Allow to cool in the oven overnight before serving.


It is a necessity to ensure that the brownies do not get over-baked in the oven. It may appear too soft or gooey when you initially take it out of the oven but it will harden up on the outside (crispy outer texture and gooey soft on the inside!).
